Steak and Creamy Mushroom Pasta with Burrata & Peaches

  1. Season the steak with salt, black pepper, and olive oil on all sides. Set it aside while you prep everything else.
  2. Slice the mushrooms, onion, garlic, parsley, and peaches.
  3. Bring a pot of salted water to a boil for the pasta, but do not add the pasta yet.
  4. Heat a skillet over medium-high heat. Add oil and sear the steak, starting with the fat cap for 30 seconds, then 2–3 minutes per side, with the last side about 30 seconds.
  5. Lower the heat, add butter, garlic, and onion hearts. Baste the steak for 30 seconds, then remove it and let it rest loosely covered.
  6. In the same skillet, cook the onion and mushrooms until browned. Season with salt only after they color.
  7. Add the butter and flour. Cook for 1 minute to make a roux.
  8. Slowly pour in the evaporated milk, then loosen the sauce with pasta water as needed.
  9. Cook the pasta 1 minute less than the package time and transfer it straight into the sauce.
  10. Add the parmesan and parsley. Adjust the texture with more pasta water if needed.
  11. In a separate pan, caramelize the peaches with sugar over medium-high heat for 2–3 minutes.
  12. Serve the burrata with olive oil, salt, pepper, peaches, and basil.
  13. Slice the steak and serve it over the pasta.
  14. Serve with a Malbec if desired: Nieto Senetiner, Finca Las Moras, or Trapiche.
