  1. Combine all sauce ingredients in a bowl and set aside.
  2. Stir-fry the pork mince over medium-high heat until browned. Reduce to medium-low, add the sauce, and cook until thickened. Remove from the pan.
  3. In the same pan over medium heat, add the tofu cubes and pan-fry until lightly golden, about 2 minutes. Pour in the beaten eggs and gently tilt the pan to lightly cook, then add the cooked mince back on top.
  4. Serve over rice and enjoy.
